This Christmas we have partnered with Pie Junkie to create a delicious beef wellington featuring Gemstone Grass Fed Beef sirloin with a classic duxelles of mushrooms, herbs, Dijon mustard with a green peppercorn sauce and a little apple butter for added richness. Wrapped in a traditional Pie Junkie butter pastry.

WARMING INSTRUCTIONS
We recommend the “low and slow” reheat method for the perfect pie every time. Place your pies on a cookie sheet in your cold oven and set the oven to 300 degrees. When your oven reaches temperature, look for a puddle of butter under your wellington. If your pastry is not yet sweating butter from the crust, close the oven for a few more minutes. You have a perfectly warmed wellington without over cooking. It’s as easy as pie! (And yes, they freeze beautifully.)
INGREDIENTS
Pastry Dough: Flour, butter, water, salt
All pastry is brushed with whole egg prior to baking
Filling: Grass fed beef sirloin, Dijon mustard, mushrooms, shallots, salt, black pepper, garlic, rosemary, thyme.
